Toast the holidays with us in “The Cooking Show” as your Host prepares Chef Tom Holloway’s Filet de boeuf en Croute aka “Beef Wellington”. A Beef Tenderloin with mushroom duxelle, wrapped in prosciutto and encased in puff pastry, accompanied by a Port Wine demi glace, roasted fingerling potatoes & seasonal root vegetables. The Beef Wellington will be paired with the Kaiken Malbec from Mendoza, Argentina-A South American Red with a complex blend of red fruits & spicy touches, soft tannins and a long finish.

“The Cooking Show” Goes Low and Slow-(February/March) Fridays, 7pm, 210 Stuart St. Boston-$75pp- Join Chef Elizabeth Bramwell, as she prepares Executive Chef Mike Kelly’s classic winter comfort dish of Slow Braised Beef Short Ribs. The Short Ribs will be braised slowly at a low temperature for hours with aromatic vegetables, red wine and rich veal stock, served with a Wild Mushroom Risotto. Our first course will be our Winter Citrus Salad with Arugula, oranges, dried cranberries and feta cheese with blood orange vinaigrette. We will be pairing the ribs with the Ergo Tempranillo from Rioja, Spain. This wine has distinct fruit forward flavors of fresh berry and plums layered with hints of spice.
